Cabernet Sauvignon

Rich, smooth and elegantly textured, this full-bodied Cabernet Sauvignon shows fruit flavors of blackberry, ripe dark cherry, black currant, and cassis that blend into darker notes of cocoa, tobacco and toasted oak. Balanced acidity and a smooth mouth feel are followed by a round, long finish.

The long growing season and Mediterranean climate of California are highly attractive growing conditions which allow the grapes to reach optimal ripeness. During fermentation we carefully extract the soft, silky tannins and rich color from the grapes. The wine is then aged on oak for close to a year which heightens the richness and complexity.

Chardonnay

Our Chardonnay is a rich and elegant wine with decadent layers of butter, cream, bright citrus and vanilla. A mild summer and a dry, temperate fall combined with light coastal winds produced fruit full of flavor. Because of Monterey County’s notoriously long hang time, the grapes developed ripe, mature flavors. Minimal heat allowed for a long, slow ripening of the fruit, which resulted in concentrated and lively flavor profiles.

Our Chardonnay is 100 percent barrel fermented, undergoing a cool fermentation with temperatures ranging from 52°F to 55°F. After primary fermentation, 50% of our wine goes through malolactic fermentation. The finished wine is then kept 6 weeks sur lies in American barrels.

Pinot Noir

The warm days and cool nights of California’s Central Coast provide optimal growing conditions to produce complex, sun-drenched fruit for our Pinot Noir. This wine offers a heady aroma of cherries that carries through to the palate, then opens up to a touch of red currants and a hint of spice.

We harvest our Pinot Noir grapes at their peak and cold soak them for a couple of days. After yeast inoculation, the juice undergoes a cool fermentation to preserve the bright cherry fruit.
